How do I change difficulty names in Frets On Fire?

I'm trying to make my own mod for Frets On Fire and I want to change the difficulty names for more originality. The problem is, I don't know how to.

No, I don't want to change them the the Guitar Hero difficulty names. I just need to know how to change them, possibly with a text editor...?
